Malabar Spinach & Cheese Omelette

Ingredients required:

Olive oil, chopped garlic- 1 tsp, chopped onions, sliced mushrooms, chopped Malabar spinach (Poi Saag), Cubes of cheese, Eggs-2, milk-2 tsp, chilli flakes, oregano and salt to taste.

Heat one tsp of Olive oil in a pan. Saute chopped pieces of garlic and chilli flakes in a pan. It will bring out Smokey flavor. Next add onions and fry till it appears golden, After onions are fried, add Malabar spinach, sliced mushrooms and add salt. Cook these under high flame.

Next step is to mix two eggs with little milk to make the omelette fluffy.

Heat little bit of olive oil in a pan. Put the egg mixture in it. Wait for sometime and put the mushroom and spinach mixture inside. Add salt, oregano and cheese as per taste and fold the omelette. Your yummy Malabar Spinach and Cheese Omelette is ready to serve hot!
